This is a common pattern: 时间过得很快 [時間過得很快] (shíjiān guò de hěn kuài, “time passes quickly”), 日子不好过 [日子不好過] (rìzi bù hǎo guò, “the days are hard to get through”).
所以 (suǒyǐ) without 因为 [因為] (yīnwèi): Just as I used 因为 [因為] (yīnwèi) alone earlier, here I wrote 所以我想好好珍惜每一天 [所以我想好好珍惜每一天] (suǒyǐ wǒ xiǎng hǎohǎo zhēnxī měi yī tiān) using only 所以 (suǒyǐ) to introduce the conclusion. The cause (time passes quickly) was just stated, so only the result marker is needed. This creates a more natural, conversational flow.

This is the most natural word order: [Subject] + 和 (hé) + [Person] + 一起 (yīqǐ) + [Verb Phrase]. The 在中国 [在中國] (zài Zhōngguó) comes right before 旅行 (lǚxíng), showing where the traveling will take place.
想让每一天都很有意思 [想讓每一天都很有意思] - The causative 让 [讓] (ràng): In this sentence, I used 让 [讓] (ràng) to express wanting to “make” or “cause” each day to be interesting. The structure is 想让 [想讓] (xiǎng ràng) + [Object/Thing] + [Verb/Adjective]. Notice how 都 (dōu) comes after 每一天 (měi yī tiān) to emphasize “all/every” days. The verb 有意思 (yǒu yìsi, “interesting/meaningful”) describes the state I want the days to achieve.
